说明： An enzyme in the gastric juice which hydrolyses proteins to give smaller polypeptides. Active only at acid pH, 1.5-2.5. Secreted as the inactive precursor pepsinogen, which is activated by acid. Preferentially cleaves C-terminal to Phe, Leu and Glu. It does not cleave at Val, Ala or Gly. Active in 4 M urea and 3 M guanidine HCl. Stable at 60 °C. Pepsin is irreversibly inactivated at pH>6.
